RAPID CITY, S.D. (KEVN) - I came across this drink while searching for spring-themed cocktails and it fits perfectly with our motto at Mixology at Home ... one, two, three ingredients ... no chemistry degree needed.

Supposedly it is a good balance of sweetness from the raspberries, and tartness from the Aperol. It could be called a spritz. It is called Berries and Bloom.

Ingredients, if you don’t already have them, are easy to snag at a local store: blanco tequila, Aperol, raspberries, lime, and honey syrup. We have a recipe for honey syrup below.

In a shaker, lightly muddle the raspberries; add ice and two ounces of blanco tequila, three quarters of an ounce of fresh lime juice, half ounce of Aperol and a half ounce of honey syrup. Shake and strain (using a strainer) into a rocks or Old Fashioned glass with a large ice cube and garnish with a couple of raspberries.

Ingredients

  • 2 oz. Rosa Blanco Tequila
  • ¾ oz. fresh lime juice
  • ½ oz. Aperol
  • ½ oz. honey syrup
  • 3 raspberries, plus 3 more for garnish

Honey Syrup

Use equal parts water and honey (I find a half cup is enough; too much and it will go bad before you finish it) in a saucepan, bring it to a boil and then reduce the heat to simmer for about five minutes and the honey is dissolved. Let it cool to room temperature and then you can store it in a bottle in your refrigerator.

The honey syrup can be used in a variety of cocktails, including Old Fashioneds (in place of a sugar cube). Here are some recipes:

Honey-Citrus Fizz

Spicy Fifty

Bee’s Knees

Most syrups will last for two, possibly three weeks before they need to be replaced.
