Rapid City sandwich shop opens new location, promotes sustainable agriculture

The Bashful Bison has relocated and now shares a building with Hay Camp Brewery.

RAPID CITY, S.D. (KEVN) - The Bashful Bison Deli and Market hosted a ribbon-cutting ceremony on Thursday to celebrate the opening of their new location in the same building as the Hay Camp Brewery. The sandwich shop emphasizes sourcing ingredients from local producers and using “products harvested using environmentally safe practices.” Owner Scott Brinker said he visits the farms and ranches to evaluate their practices and explains what he looks for in suppliers.

“If they’re using natural methods, if they’re returning compost to the soil if they’re producing their own seeds, those are the kind of things that weigh up,” Brinker said.

Brinker also said customer feedback contributed to his decision to relocate next to Hay Camp. Bashful Bison customers had previously said they wished the shop sold beer. Brinker spoke with Hay Camp Brewery owner Karl Koth, who told Brinker his customers were often looking for something to eat with their drinks.

Now, with the two businesses connected, customers can order from each establishment at the same time. According to Brinker, this has boosted sales for the Bashful Bison and Hay Camp alike in their first month of sharing a building.
